Summer Sweet Treats

Got the urge to bake something this summer?  These delicious, time-tested recipes are perfect for poolside treats, travel snacks, or a sweet surprise for your Grandmother!  Does the thought of baking in the kitchen seem daunting and time-consuming?  No worries, these recipes are quick and easy.  So grab an apron and a friend, and let’s get baking!

Cocoa Quickies
These scrumptious, no-bake cookies are perfect if you’re in a hurry, or don’t want to heat up your house with the oven.  The mixture of chocolate and coconut provide a rich, summery taste that any girl would love!
Ingredients:







½ cup milk

½ cup butter
6 Tbs. cocoa

2 cups white sugar

3 cups oatmeal

1 cup coconut


In a sauce pan, combine the milk, butter, cocoa, and sugar.  Bring to a full boil, stirring constantly.  Remove and add the oatmeal and coconut.  Mix well, and drop by spoonfuls onto wax paper.  Let cool, and enjoy!

Rainbow Delight Rice Crispy Pops

Do you have some younger siblings, or kids you babysit?  Make their day special with these adorable rice crispy pops.  Plus, you won’t have to deal with the kids’ sticky fingers and faces that would come with eating a regular Popsicle!

Ingredients:

1 stick butter

16 oz. (1 ½ bags) mini marshmallows

½ cup creamy peanut butter

Squirt of honey

8 cups rice crispy cereal

Rainbow or colorful sprinkles

Popsicle sticks


In a large pan, melt the butter and mini marshmallows.  Add the peanut butter, and a squirt of honey, stirring consistently.  Then add the rice crispy cereal, still stirring.  Take pan off the burner.  Butter your hands, and then form the mixture into any shape you desire.  (Circle, heart, square, star, etc.)  Press a Popsicle stick into each pop, then let cool.  After they are cooled, dip end into melted white or semisweet chocolate.  Press colorful sprinkles onto the rice crispy pop.  Tie with a colorful ribbon, and spread some summer fun!
